Domaine Dauvissat
Rene and Vincent Dauvissat are without a doubt at the very top of the Chablis hierarchy and hailed as one of the finest domains in France today, perhaps only rivalled with Domaine Raveneau. The winery was started by Robert Dauvissat in the 1920s, but the name was really made by his son Rene, who was at the helm for years. Vincent joined his father in 1976.
The domain covers 11 hectares which includes holdings in two Grand Crus - Les Clos and Preuses and a number of Premier Cru sites including La Forest, Vaillons and Sechet. Organic farming has been in place for decades and biodynamic farming methods have been utilised since 2002, though Vincent has no interest in being certified.
In the cellar, the wines are all fermented in enamel tanks before being transferred to oak barrels - no more than 10% new - with their lees for a long elevage. The wines destined for the UK market are all bottled unfiltered.
