Domaine Bernard Defaix
This estate is synonymous with top tier Chablis. Bernard Defaix began the family’s Chablisienne life in 1959 with just two hectares of vines and now his sons - Didier and Sylvain - are at the helm and the estate has grown to 27 hectares.
They converted the estate to organic and were certified in 2009. Since then, they have begun experimenting with some biodynamic practices as well to great results.
Didier’s wife, Hélène Jaeger-Defaix, has carried the family torch to the south, creating the 6ha Jaeger-Defaix estate in Rully, Côte Chalonnais. Like her Chablisienne counterpart, she farms organically and is working hard towards as little interventions in the cellar and vineyard. 2022 is the first release of her sans soufre wines that are made in stainless steel vats and bottled unfined and unfiltered.
